Use up stale gingernuts (and these really were stale) with this classic flavour combination. Great on your favourite toast, fresh raspberries optional.

- Pestle & mortar or something else to bash the biscuits with
Ingredients
- 1-2 stale gingernut biscuits (you don’t want them crunchy in a smooth butter)
- Half a ripe avocdo
- Juice of half a lime
Method
- Crumble the biscuits completely with a pestle & motar, or place in a sandwich bag and bash with a rolling pin.
- Keeping the avocado half in its skin, score it into 1cm ish cubes then simply squeeze onto the biscuits – saves a chopping board, much easier and the avocado is already half mashed.
- Add the lime juice – prevents the avocado going brown but is also a great flavour combination with the ginger.
- Mash the whole lot together.
- Spread on your favourite toast. Easy.
