I may be a little late on this one but after the horrors of a courgette famine at the start of the year, we have probably just come through what for anyone with an allotment or penchant for home-grown veg, is the time of year when you have a glut of courgettes to get rid of. It’s at this point that you realise that there are only so many things you can do with a courgette and your family declare that they never really liked them anyway. Spiralised courgette wittily named ‘zoodles’ just tastes like cold wet courgette now that autumn is here.
So cake it is. A much more comforting but still slightly summery citrus courgette polenta cake to be precise.
Oh and if you are looking for something less cake focussed, I can heartily recommend adapting Waitrose’s pickled radish recipe to courgettes instead. Last much longer than their advertised 3 days (try 3 months) and taste great with fish & chips.
