Cheese & marmite is no secret combination. A quote I’ll confess to only having heard second hand from the founder of one of my previous employers said that if ‘you see a band wagon, it’s too late’. If that’s true, then when international coffee chains sell a combination as a sandwich, the band wagon has well and truly rolled.
On the flip side, I believe Picasso is known to have said that ‘good artists copy, great artists steal’. In this case, I don’t know who to credit with the original but I know a friend & I discovered one night that strong cheese, marmite & apple go together like a match made in heaven. If you like marmite, that is.
This recipe, like many of mine, uses up stale bread. The loaf it makes is a great lunchtime filler but equally portions up well to be eaten cold on the move. It has been known to fuel the odd long bike ride but I can’t completely vouch for its endurance-fuel credentials.
